Cultivating Mesoamerican products in the heart of Castile is a challenge only for the brave. But the harsh conditions allow us to obtain exceptional chilies with slow growth and ripening, and incredible organoleptic characteristics.
Cultivation using traditional fallow succession. Green manure, organic fertilization, and the non-use of phytosanitary products on our chilies (not even those allowed under EU organic regulations) are the hallmarks of how we understand our work.
We inherit ancestral Mexican procedures and techniques, but we have a global soul. Each sauce is unique. With special care for the recipe to achieve a product that captivates with its ancestral aroma, its expansive essence, and its strong characterful flavor. A medium-range spice to appeal to any palate.
We take production very seriously. Our sauces seem simple, but their preparation is not easy. Both our 3-day and 3-night smoking process, and our 2.5-year fermentation, are done respecting traditional techniques and times to achieve the best product."

Impossible to categorize, Salá surprises by being atypical and simple at the same time. Its ingredients: virgin salt and smoked chipotle chili. It needs nothing else to elevate the flavor of any dish.
Try it with: Absolutely everything. A friend to eggs, pasta, and stews, Salá has no limits. It can make a boring vegetable cream or grilled white meat special.
