Growing Mesoamerican products in the heart of Castilla is a challenge only suitable for the brave. But the harsh conditions allow us to achieve exceptional chilies with slow growth and maturation, and incredible organoleptic characteristics.
Crops in traditional fallow succession. Green manure, organic fertilization and the non-use of phytosanitary products in our chili peppers (not even those admitted in
the EU organic regulation) are the hallmarks of our way of understanding our work.
We inherit ancestral Mexican procedures and techniques but we have a soul of the world. Each sauce is unique. With special care for the recipe to achieve a product that conquers with its ancestral smell, its expansive essence and its flavor of great character. A spicy medium range to bring it closer to any palate.
We take crafting very seriously. Our sauces look simple, but
its preparation is not easy. Both our smoking of 3 days and 3 nights, as well as our fermentation for 2 and a half years, are done respecting the technique and traditional times to achieve
the best product."
Spicy Chipotle Chili Sauce:
With a sweet appearance and a semi-liquid texture, Genial sauce stands out for its smoky flavor and its medium-low heat.
It is made from organic chipotle chile and is smoked very slowly, following the Mexican tradition.
Try it with: Pasta and rice, red and white meat, stews and fish... This is an all-terrain sauce. You can combine it with any dish you can think of and it will simply be great.
